It’s so awesome to be able to eat really good pancakes or waffles with no guilt or sugar crash and lots of protein!

Here we go:

2 large eggs

1/4 cup maple syrup

1 T Vanilla extract

1/4 cup milk (you could use water)

1 1/2 cups Almond Four

1/2 salt (Pink Himalayan is best!)

1/2 baking soda

1 T arrowroot powder or corn starch

Oil to cook in

Combine first 4 ingredients in blender til smooth. (Yes blender. Really makes it easy to mix and pour with one tool.)


  

Add next 4 ingredients and blend well. Add more water or milk if you want thinner pancakes. I added about a 1/8 cup or so more milk.


Heat griddle to about 300 degrees. Spray on oil or spread it around. Pour batted on. Flip when you see bubbles.


I make extra, put them in the fridge and then the kids put them in the toaster.

Enjoy with a big glass of raw milk!
