Yes!  I am on a total oatmeal kick.  Today I am going to give you an alternative to spending money on boxed cereal.  It’s healthy and it’s good!

Are You A Cereal And Milk Lover?

In our house, we all love cereal and milk!  Maybe 1/3 of the time we will have french toast or eggs, but the rest of the time it is usually cereal or toast.  And breakfast is the main area that I have always  had the desire to go as healthy as possible.

I’ve never bought the regular sugared cereals at the grocery store.  (Actually, I did one time recently, but it was for an afternoon snack.)  My theory is if we can start the day out healthy,  we are ahead.    As the day wears on, everything seems to go downhill.

For quite a few years I bought our cereal at the health food store.  Our favorite was Peanut Butter Bumpers by a company called Mother.  It is wonderful.  But it’s $4/box.  And it goes fast.  Even through the food coop that I’m in, it is almost that much.  So lately, I have been searching for new, less expensive, healthy ways to eat.

I KNOW they are there.  I just have to find them.

And Look What I Found!

I made this recipe 2 days ago.  Loved it.  And I’m making it right now again as I write this post.

These pictures are from making 1/2 of the recipe below.  I wanted to make sure I liked it.  Right now I’m making the full recipe.

Overnight Granola (Or All Afternoon Granola)

14 cups regular rolled oats (not quick) (You could add seeds and/or nuts.  I just used plain oats.)

1 cup brown sugar or sucanat (I’ve now used both and they are equally good.)

1 cup oil (I use coconut oil)

1 cup honey

Heat the sugar, oil and honey on stovetop.  Heat to a rolling boil.  You can add a little cinnamon and/or vanilla to this.

While this is heating, put your oatmeal in a roaster or a roasting pan for the oven.  No need to grease.

Pour 1/2 your liquid onto oats and stir.  Pour the other 1/2 on and stir really well.

Stir it up really well.

Turn roaster or oven to about 200 degrees and let it sit in there for about an hour.  No lid.  Stir every 20 minutes.  Then turn off stove/roaster.  Cover with lid and let sit overnight.

In the morning turn it back on to warm it up (if you want to) and serve with fresh fruit and milk.  Or plain.   Put the leftovers in a plastic bag.   Ahhhh.  Cereal.  And not bought at the store.  I’m having some serious satisfaction right now!

This recipe comes from my MOMYS cookbook.  That stands for Mothers Of Many Young Siblings.  It is full of great recipes.  I got this cookbook just 6 months ago and it has quickly become my favorite.

    I am a “granola in the morning” freak!! Blueberries (even frozen) and nofat plain yogurt finish it off. I make my granola with yogurt butter – Brummel and Brown . Totally addicted!!

    FYI Davis children I do not eat cereal I guess I ate cereal as a baby. But I have never had the cereal touch my mouth as long as I can remember. But this actually looks really good. If I am ever blessed with children I will have to remember this recipe. Your blog is excellent keep rockin it out Allison.
