Bread pudding

I love, love, love the crockpot.  It is one of the best tools to help achieve a more stress-free life.  If for some strange reason you haven’t gotten one yet, I URGE you to hop on over to to your favorite Stuff-Mart and get one.  And I mean NOW!  They are a ton of bang for your buck.

We’ve made this dessert for several very nice dinners.  It is easy (my middle name).  It is beautiful.  And it is delicious.  We made it for my husband’s last birthday AND we made it for Dr. J. Rufus Fears when he came for dinner before one of his history lectures.  He was a bit of a celebrity in our house.  You would have thought our daughters were making dinner for a president or a rock star.

Anyway, here it is.  These recipe instructions will serve 6.  In my photos I have doubled it so we can have leftovers.

INGREDIENTS:

Bread Pudding ingredients

8 slices bread, cubed

4 eggs

2 cups milk

1/4 cu sugar

1/4 cu melted butter

1/2 t. cinnamon

1/2 cu raisins or dried cherries

We use these dried cherries, instead of raisins, that I get from Braums and love it that way!

SAUCE INGREDIENTS:

That’s my bulk sucanat back there.  Unrefined sugar.  It is healthy (as sugar goes) and I buy it bulk from my food coop so it’s a great price.  I now use it for everything instead of regular sugar or brown sugar and it works great.  My husband even puts it in his coffee and he is usually a hard one to switch over to the healthier version of something.

Bread Pudding Sauce ingredients

2 T butter

2 T flour

1 cu water

3/4 cu sugar

1 t. vanilla

Place bread cubes in greased crockpot.

Beat together eggs and milk.

Not sure you really need a photo of cracking eggs, but I like pictures and those look like my 8 year old’s hands which are so cute!

Into the eggs, stir sugar, butter, dried fruit and cinnamon.  Pour over bread and stir.

Cover and cook on High 1 hour.  Reduce heat to Low and cook 3-4 hours.

And now ….. the “After” shot.  Yummy.  Wonder if I should go make this right now?

SAUCE

Make the sauce just before pudding is done baking.  (I make is whenever it’s convenient an hour or so before dinner, then leave it on the stove in a covered saucepan and just heat it back up quickly as I’m dishing out the pudding.)

Begin by melting butter in saucepan.  Stir in flour until smooth.  Gradually add water, sugar and vanilla.  Bring to boil.  Cook, stirring constantly for 2 minutes, or until thickened.

Serve sauce over warm bread pudding.

    I am also a crock pot lover. Prob use mine twice a week at least. You can go to allrecipes.com and search crock pot and find tons of recipes. Just filled mine with split pea soup!

    Thanks Ebby for the website. I will check it out. I usually use a cookbook that is only crockpot recipes.

    I just stumbled on this recipe this morning and look forward to trying it. I’m always on the lookout for crockpot breakfast recipes that I can put in the pot before bed and let it cook overnight. Having something ready and waiting is great since my husband, daughter, and sons get up and out the door at different times. With your recipe, have you tried cooking it on low for around 6 hours instead of high for 1 and low for 3-4?
